Rosy Cheeks and Mulled Juice

Oh, how I’ve been waiting for the winter sports’ season to start!
Due to the light and handy equipment I stick to show shoeing, and if you ever considered it: give it a try! It’s wonderful to be outside for hours in the snow, walking through white forests, and often you’re all alone with Sister Winter.
After hours in the fresh, cold air I return home with rosy cheeks and happy as a child. Then it’s just perfect to have a nice & warm drink.
Mulled wine is all fine, but if you want to avoid alcohol, mulled juice is lovely, too!
For 50 cl of normal apple juice, I use:
1/2 cinnamon stick
1 Tsp cloves
1/2 Tsp star anise
1/4 Tsp fennel seeds
1/4 Tsp cardamom seeds
Dry roast the spices in a saucepan until they start to release their fragrance, add the apple juice, and let it simmer for 5 min. Then let it rest for a while, in order for the flavours to unfold, and strain away the spices. The mixture keeps for a week in the fridge.
Whenever you feel a bit chilly, heat a cup of the mulled juice in a saucepan and, as done in Sweden, add raisins and chopped, toasted almonds. Enjoy!
